Col. Bill Newsom’s Aged Kentucky Country Ham
SUNDAY NOONMEAL • Newsom’s Aged country ham, fried (recipe, see above) • Fried Creamed corn (recipe) • garden fresh green beans seasoned w/Newsom’s ham • Posey county cantalope • Vine Ripe Tomato slices • Hot rolls and butter • Iced Tea
Recipe: Nancy’s Fried, Creamed Corn • 12 ears fresh corn, cut off the cob and scraped with back of knife to save milk. • 2 tablespoons margarine or butter • 1/4 cup sugar • 1/2 teaspoon black pepper • 3 cups or more • 1/2 cup warm water • 4 tablespoons plain flour
Heat margarine on medium high in a good size skillet.
Add fresh corn, cu† from the cob.
Add 3 cups milk, sugar and pepper.
Bring to a boil, reduce heat and simmer for approximately 15 minutes or until corn tender.
Combine warm water and plain flour until smooth.
Add to skillet of corn.
Add more milk or warm water if corn becomes extremely thick.
Simmer 10 more minutes.
