Col. Bill Newsom’s Aged Kentucky Country Ham
BREAKFAST • Newsom’s Center slice or end slice aged country ham (fried) (recipe) • Scrambled eggs • Quaker’s Quick grits topped w/one pad butter • German fried potatoes (recipe) • Toast • Hot coffee • Orange juice
Recipe: Newsom’s Center or End Slice aged country ham (fried)
1. Trim off hard outer edge of meat and remove rind. DO NOT TRIM FAT. This adds flavor, and no other fat will be needed.
2. Fry in large heavy skillet, turning lean away from the hottest point of skillet.
3. FRY SLOWLY. Do not over fry. This will make the ham hard , dry and tough. Turn slices often. Ham is usually done when fat is transparent and beginning to brown.
4. For milder or LESS SALTY taste, soak slices in lukewarm water or sweet milk for up to 30 minutes before frying. (For frying ham slices with extremely red, rosy color, which are more aged, less frying time will be required.)
Recipe: Bill’s German Fried Potatoes • several thinly sliced raw potatoes • one small onion, diced • 1/2 cup oil • Place potatoes and onions in a heated skillet with the oil. Cook on medium to medium high until done turning as they cook and brown.
