Finchville – Red Eye Gravy

Finchville – Country Ham Salad
Ham Balls
2 cups ground Finchville country ham
1 cup milk
1 cup bread crumbs
1 cup sausage
Mix ingredients well and form into small balls (about 1 inch).
Put in a shallow pan and pour sauce over them.
Cover with foil for first 45 minutes and bake in slow oven (300 degrees) until sausage is done.
Remove foil for the last 15 minutes of cooking time. Turn balls once during cooking time to absorb sauce better.
The Balls will be browned when done.
Ham Ball Sauce
3/4 brown sugar
1/2 tbsp. salad mustard
1/4 cup cider vinegar
1/4 cup water
Combine ingredients together in a mixing bowl.
