Clifty Farm – County Ham and Eggs Benedict
Maple Glazed County Ham
When setting up your table centerpiece, the aroma of your country ham combined with its rich flavor is sure to please. Be sure to add glaze to compliment your meal!
Prep Time 24 hrs. | Cook Time 2 1/2 hours
INGREDIENTS:
- 8-10 lb. Clifty Farm country ham portion
- ½ cup maple syrup
- ½ cup brown sugar
- ¼ cup apple jelly
- 1 teaspoon thyme
- 1 teaspoon crushed rosemary
- 1 teaspoon dry mustard
- ¼ teaspoon allspice
DIRECTIONS:
- Soak the whole country ham in water for 24 hours. Switch the water out every 8 hours. Dispose of water and cut the loose fat off the ham.
- Put the ham in a pot and fill it with water until the ham is submerged. Bring the pot to a boil on the stove and reduce it to a simmer. Simmer for 1½ hours with a lid on.
- After the time is complete, remove the ham from the water and set it on a rack to dry.
- Put the rest of the ingredients in a small pot and heat on the stovetop to medium heat. Bring to a simmer and reduce until the sauce thickens. Remove from heat and let cool.
- Preheat the oven to 375 degrees F.
- Once the glaze cools, coat the ham with half of the glaze. Place ham on a rack with a baking sheet beneath and place in the oven to cook for 20 minutes. After the time is finished, coat the ham with the remaining glaze and cook in the oven for another 20 minutes.
- Remove ham from oven and let cool for 10 minutes before serving
